Hi! I’m Emilie, and I’m so happy you’re here.
I started this blog in August 2015 as a creative outlet during my sophomore year of college. I have always loved experimenting in the kitchen, plus I enjoyed photography, so blogging was a perfect fit! I went vegan during the summer of 2015 and was creating so many plant-powered versions of foods I’ve always loved. I needed to share them with the world!
Today Emilie Eats is a food, nutrition, and lifestyle blog dedicated to sharing nourishing recipes and sustainable living tips. I love plants, animals, and the planet. I also love good food. My mission is to get more people cooking in their own kitchens with wholesome ingredients. Think of me as a friend here to cheer you on during your journey to better health!
Each week I share the simple, plant-powered recipes I make in my own kitchen. You’ll notice that my recipes feature affordable foods like lentils, potatoes, fresh fruits and vegetables, nuts, and whole grains. That’s because I believe that healthy eating should be accessible to everyone. I learned how to cook as a kid using only ingredients from our small-town grocery store, and I still cook with those same simple foods.
I’m originally from the bayous of Louisiana, but now I’m in Colorado receiving my master’s degree in nutrition. In a few years I’ll be a registered dietitian, ready to answer all of your food and nutrition questions! I’m also a cat momma to an adorable tabby Leo, who loves to lick the leftover food off my plate.
I believe that health is balanced. I don’t believe in an all-or-nothing approach to nutrition. I believe in evidence-based nutrition and eating satisfying foods that will fuel your body. I believe in moving and feeding your body because you appreciate all that it does for you. I hope you find some recipes here that you can pack for lunch, share with your family and friends, or enjoy after a long day.
