Life is too short for boring snacks. Let me be clear – there is nothing wrong with a simple carrot dipped in hummus. In fact, it’s a go-to easy snack for me. But if you’re looking for some fun, fresh new ideas for what to eat with hummus, then I’ve got you covered. These hummus cucumber bites don’t take more than 5 minutes to make, but they’re full of flavor and super fun to eat. Pile them high with toppings like tomatoes and olives, or stack them for mini cucumber hummus sandwiches.
There are lots of ways to play with these hummus cucumber bites to make them your own! Mix up the toppings, pick a different hummus flavor, or add them with other snacks as part of an afternoon snack plate!
How to Make Hummus Cucumber Bites
There’s really nothing to these hummus cucumber bites! I’m topping mine with halved cherry tomatoes, olives, parsley and hemp seeds, but you can also totally play with the add-ons. Dill or basil are great swaps for parsley. You could use capers to add a bit of brine if you don’t like olives. Sun-dried tomatoes are a great sub for fresh tomatoes, and you can swap out the hemp seeds for any other seed! Feel free to get creative and let me know your favorite combinations in the comments!

- Slice cucumber into 1/2 inch slices, chop tomatoes and slice olives.
- Spread a dollop of hummus onto each cucumber slice.
- Top each slice with a tomato half and an olive half.
- Sprinkle fresh parsley and hemp seeds on top of each cucumber slice.

- 1 cucumber, sliced into 16 slices
- 1/4 cup Hope Foods Red Pepper Hummus
- 8 cherry tomatoes, halved
- 8 Kalamata olives, pitted and halved
- Fresh parsley, chopped
- Hemp seeds
Instructions
- Slice cucumber into 1/2 inch slices
- Place cucumber slices on a flat surface. Spread a dollop of hummus onto each slice.
- Top each slice with a tomato half and an olive half.
