You can’t show up empty handed, so you pull up Google Maps and figure out how late you’d be if you stop at the grocery store on the way to pick up a veggie tray.

We’ve ALL been there, and I have a faster solution! This pineapple three bean salad! It tastes 100 times better than the pre-cut veggies and dip you were about to buy and I’ll bet you that it’s faster to throw together than it would be to make a stop at the store!

I’m a huge fan of “throw stuff into a bowl & mix” lazy meals. They’re packable, meal-preppable, and most important, SIMPLE. Simple ingredients, simple to make and simple to clean up. What’s not to love?

This three bean salad is about as simple as it gets. Pop a couple cans, thaw some stuff from the freezer, dress it and mix it! It tastes so fresh that you’d never guess that it’s made entirely with pantry staples. The secret? Frozen pineapple! It adds a bright pop to this three bean salad that really makes it something special. Serve up this summer salad with chips, throw it over greens, use it as a garnish or add it as a side to your dinner! However you like to use it, I promise it’ll be a new go-to recipe for you, so save it for later!

Why make a black bean and corn salad when you can use three beans!? Yes, we’re using three different beans in this salad because HELLO beans are basically the greatest food on the planet. They’re protein-packed, full of fiber and provide so many nutrients.

There really is nothing better than juicy pineapple in the summer, except for maybe a bite of pineapple mixed with three types of beans and veggies. Yes, I am taking about this salad.

The sweetness of the pineapple mixed with a hint of spicy chili powder and the heartiness of the beans makes every bite of this three bean salad a party in your mouth. Oh, and speaking of party, this would be the perfect dish to bring to a summer party. Bonus points if you bring tortilla chips.

Keep the ingredients on hand and you’ve got a fresh summer salad ready to go whenever you need something quick! Here’s everything you’ll need!

  • Black beans. Black beans and pineapple are made for each other. You just need one can!
  • Chickpeas. Again, just one can needed! This might be my favorite bean of the bunch!
  • Edamame. Look for frozen edamame at your grocery store! All you have to do is thaw it and toss it into your salad.
  • Cherry tomatoes. I love the pop of a cherry tomato, but you can use any variety of tomato you like.
  • Corn. Either canned or frozen works.
  • Pineapple. You can chop up a fresh pineapple, or just thaw some frozen pineapple.
  • Cilantro. A bit of fresh cilantro brightens up this pantry staple salad.
  • Garlic. You only need one clove for this three bean salad.
  • Seasonings. A bit of chili powder, cumin, salt, and pepper are all you need to add a ton of flavor to this three bean salad.

How to Make this Pineapple Three Bean Salad Recipe

What are your weekend plans? I’m no psychic, but I see you making this three bean pineapple salad. It’s just a feeling. No exaggeration, you can get it done in five minutes. The only real work for this recipe is that you have to chop up your tomatoes and open a few cans. This three bean salad recipe maaaay be my simplest thing to make on the site.

Here’s how ya do it:

  1. Drain and rinse your beans
  2. Thaw your corn, edamame and pineapple if you’re using frozen. I like to thaw these ingredients by soaking them in water.
  3. Chop tomatoes, cilantro and garlic while your frozen ingredients are thawing.
  4. Add black beans, chickpeas, tomatoes, edamame, corn, pineapple, and cilantro to a bowl and stir until everything is evenly combined.
  5. Mix in your garlic, chili powder, salt, cumin, and pepper.
  6. Serve with chips and enjoy!

No matter what you signed up to bring to your cookout, I promise this Pineapple Three Bean Salad will work. Have to bring a side? Awesome, eat it on the side with your veggie burger! Signed up to bring a dip? It works as a salsa! Need to bring a salad? Serve it over greens! There’s pineapple in it, so maybe it could pass as a dessert? That might be a stretch. BUT, my point is, there are so many ways to eat this three bean salad. You could totally dig right in and eat it as it is, but there are so many other ways to enjoy it! Here are a few ideas:

  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup shelled edamame, thawed if frozen
