Key Lime Pie Chia Pudding Parfaits

There are so many things to love about chia pudding. It takes almost no prep work if you can remember to mix it up the night before. Chia seeds are packed with fiber, plant-based protein, omega-3’s and antioxidants, so chia pudding is a great choice for an energizing breakfast. Plus, you can add in pretty much any flavor you’re craving into a chia pudding, so it’s such a versatile go-to to have in your back pocket if you like to mix things up in the morning.

Lately, I’ve been dreaming of key lime pie. The cooling, tart, perfectly sweet flavor paired with a delicious pie crust? Sign. Me. Up. So what’s better than finding a way to have key lime pie for breakfast? I’m sure there’s something, but not much!

I immediately turned to trusty chia pudding to translate key lime pie flavors into an energizing breakfast, and thus, these Key Lime Pie Chia Pudding Parfaits were born. This vegan chia seed pudding recipe is healthy enough to have for breakfast, which is how I enjoyed it, but I think it would also make a great, fresh dessert for the summer. Or a pre/post-workout snack. Or dinner…no judgment!

Ingredients for Key Lime Pie Chia Pudding Parfaits

This isn’t just any vegan chia seed pudding recipe. These are key lime pie chia pudding parfaits! They’re made up of three layers: a no-bake gluten-free crust, a creamy, protein-packed vegan pudding, and of course our key lime chia pudding. If you just wanted to make the chia pudding you totally could, but I highly recommend going all out and making all three elements. Here’s what you’ll need:

Vegan Chia Seed Pudding Ingredients

  • Chia seeds. Can’t make key lime pie chia pudding without chia seeds!
  • Non-dairy milk. I used almond milk, but go for whatever variety you have on hand.
  • Avocado. Yep, you read that right. This will add even more fiber and healthy fats, plus it’ll make this vegan chia seed pudding super creamy.
  • Lime juice. Use fresh lime juice, I promise it’s worth the extra effort to squeeze the fresh limes.
  • Agave nectar. You could also use maple syrup.
  • Lime zest. We’re using this in the vegan chia seed pudding, plus extra for garnish.
  • Vanilla extract. This will make the chia pudding taste even more like pie!
  • Spirulina powder. This is optional, but it’ll give your chia pudding that beautiful green color.
  • Salt. To balance the sweetness.

No Bake Gluten-Free Crust Ingredients

  • Rolled oats. You’ll definitely want rolled oats here, as steel cut do not have the same texture.
  • Almonds. This adds the perfect crunch and another source of healthy fats and plant-based protein.
  • Applesauce. Go for unsweetened as there’s plenty of sweetness all throughout the rest of the components for these vegan parfaits.
  • Salt. For balance.

Vegan Vanilla Pudding Ingredients

  • Silken tofu. You definitely want to look for silken tofu for this recipe for a creamy, velvety smooth vegan pudding.
  • Vanilla extract. It’s vanilla pudding after all!
  • Agave nectar. Again, you could use maple syrup here instead.
  • Salt. Just a pinch will really help make the vanilla flavor pop.

How to Make Chia Pudding

The best part about chia pudding is that there’s really nothing to it. Just mix up all the ingredients, pop it in the fridge and forget about it for a few hours! But if you’re going all out to make a chia pudding parfait (which I hope you are), you’ll need to do just a tad more prep work.

You’ll want to start by making the chia pudding, since it’ll need to set. Grab a bowl and add in your chia seeds, milk, avocado, lime juice, agave, lime zest, vanilla, spirulina, and salt. Mix it up until everything is well combined, and just let it sit, preferably overnight.

Then when you’re ready to enjoy your key lime pie chia pudding, it’s time to whip up the crust and the pudding! To make the crust, add your oats, almonds, applesauce, and salt to a food processor or blender and pulse until it forms a soft dough. Then clean out your food processor or blender because we’re using it again! You didn’t think I’d make you get an appliance out for breakfast if we didn’t use it for more than one thing, did you? 🙂

For the pudding, you’ll add your tofu, vanilla, agave, and salt to the food processor or blender and blend it up until it’s silky smooth.

Time for the best part – assembly!

How to Build Key Lime Pie Chia Pudding Parfaits

These vegan chia seed pudding parfaits take no time to put together, but man does it feel like a luxurious way to start the day. Not only does it look beautiful with all the layers, but it’s such a nutritious breakfast packed with healthy fats, protein, and complex carbs. Oh, and it tastes like a slice of key lime pie. WIN.

The parfaits start with a base of the no bake gluten free pie crust, so lay down a generous serving in the bottom of your dish and press into the edges. From there, layer on some of that beautiful, creamy vanilla pudding base. This is the key to that dreamy, custardy key-lime-pie-reminiscent texture. Then add on your delicious lime-juice infused chia pudding for that bright, tartness we know and love.

Finish it off with some crunchy granola and extra lime zest, because why not!

Ingredients

  • Chia pudding:
  • 1/4 cup chia seeds
  • 1 cup almond milk, or other non-dairy milk
  • 1/4 cup mashed avocado
  • 1/4 cup fresh lime juice
  • 2 tablespoons agave nectar or maple syrup
  • 1 teaspoon lime zest, plus more for garnish
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon spirulina powder (optional)
  • Pinch of salt
  • Crust:
  • 1/4 cup rolled oats
  • 2 tablespoons almonds
  • 2 tablespoons unsweetened applesauce
  • 1/8 teaspoon salt
  • Pudding:
  • 6 ounces silken tofu, drained
  • 1 teaspoon vanilla extract
  • 12 tablespoons agave nectar
  • Pinch of salt

Instructions

  1. In a medium bowl, add chia seeds, milk, avocado, lime juice, agave, lime zest, vanilla, spirulina, and salt. Stir well until all ingredients are combined. Let the mixture sit for at least 2 hours, or overnight if possible.
  2. When ready to serve, add oats, almonds, applesauce, and salt to a food processor or blender. Process until a soft dough forms. Press half the dough into each base of two jars or cups.
  3. To make the pudding layer, add tofu, vanilla, agave, and salt to the food processor or blender. Process until smooth. Scoop half the pudding into each jar or cup.
  4. Divide the chia pudding evenly between the two jars or cups. Top with your choice of toppings, like granola and extra lime zest.
