This Blueberry Five Bean Salad makes a light, healthy lunch or crowd-pleasing appetizer when served with chips! It’s full of fiber, plant-based protein and has a flavorful antioxidant-infused berry dressing (thanks to the delicious flavors of Bai).
First things first, this Blueberry Five Bean Salad is so easy to make that you can whip it up in a hotel room. How do I know that? Because I literally whipped it up in our hotel room last weekend.
I will say that it is only easy to make if you have access to a can opener, because this recipe calls for 5 cans of beans. I made the really smart decision to not bring a can opener from home… which resulted in me bringing my 5 cans of beans to the hotel kitchen staff for them to open. BLESS those kind people.
Long story short, bring a can opener. Buy groceries. Whip up this summery five bean salad in your hotel room, your kitchen, your mom’s kitchen, wherever. It’s that simple to make!
I wanted to have this Blueberry Five Bean Salad in our hotel room for snacking because I usually slack on my fiber and protein intake during vacation. Give me all the chips & salsa, margaritas, granola… but I still need some fresh, wholesome food that isn’t so rich and dense.
This salad is coming through with alllllll the fiber and plant-based protein thanks to five (!!!) different kinds of beans. Beans, beans, the magical fruit, am I right?
Then we add sweet corn, red onion, cilantro and blueberries (yes, blueberries!) to the bean mix. I know blueberries in a savory bean salad might seem weird, but those small bites of juicy sweetness are heavenly.
The fresh blueberries complement the blueberry dressing beautifully. The base of the dressing is simply olive oil, apple cider vinegar, mustard, salt and pepper. But it really comes together thanks to the addition of Bai® Brasilia Blueberry that I bought at Kroger for a berry twist! It’s the perfect dressing for drizzling on anything and everything this summer.
I was able get all the groceries I needed for this salad from my local Kroger! I love that their Simple Truth line carries many affordable, organic options—like their canned beans, which come in non-BPA cans. The produce is also affordable at Kroger, which is a huge plus for me since I’m basically a rabbit when it comes to fruit and veggies.
Plus, you can use the Kroger app to make a shopping list before you go so you know exactly what you need. No more wasting time! You can click the item off your list once you grab it.
I really love the selection of Bai at Kroger because they carry all my favorite flavors: Brasilia Blueberry, Kula Watermelon, Molokai Coconut (hello, pina colada!) and more. Bai only has 1 gram of sugar and 5 calories per serving, with NO artificial sweeteners and is antioxidant infused. Win, win, win – am I right?
I love using Bai as a mixer when I’m making cocktails or on its own as a sweet, refreshing drink on a hot day. And of course, in salad dressing like in this Blueberry Five Bean Salad! Check out more Kroger shoppable recipes featuring Bai by clicking here.
We ate this salad with endless tortilla chips, which made for the perfect beach snack, but this would also make a great lunch to prepare ahead of time and pack for the week! Serve it over greens, grains or on its own. Really amp up the flavor and pair it with a Bai Brasilla Blueberry drink on the side as well!
The best part? No need to turn on your stove or oven. 🙌🏼🙌🏼
