SUMMER IS HERE IN FULL FORCE! I swear I will celebrate the beginning of summer every year of my life, so be prepared to read those words every summer for as long as I’m still blogging – no matter how hot it is.
I’m really excited to be back in Colorado after weeks of traveling because there are so many fun things to do here in the summer. Hike, bike, swim, road trip, go to the park, listen to live music downtown… we’re going to ignore the fact that I’m taking a summer class and instead pretend like I have no responsibilities this summer.
Oh wait, did I mention PICNIC? It’s time for all the picnics, y’all!
I love being outside, and I love food. So I can’t think of anything better than a picnic. Also, picnic food is the best. Crackers, fruit, sandwiches cut into triangles, pasta salad, maybe even wine if you’re feeling fancy.

How to Make Italian Pasta Salad
This pasta salad is stupid simple. Cook pasta (easy), chop vegetables (a breeze), and add dressing (just olive oil). You could make this Italian pasta salad recipe in your sleep.
Feel free to customize it how you please. I personally love kalamata olives, but you can also use black olives. Add some cubed tempeh for plant-based protein. Serve it over greens. So many options!

Ingredients
- 8 ounces whole grain pasta (gluten-free if necessary)
- 1 package Daiya Foods Jalapeño Havarti Style Block, cut into small cubes
- 1 1/2 cups cherry tomatoes, halved
- 1 cup artichoke hearts, chopped
- 1/2 cup kalamata or black olives, sliced
- 2 tablespoons basil, chopped and packed
- 1/4 cup olive oil
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
Instructions
- Cook pasta according to package directions. Drain.
- Add pasta and the remaining ingredients to a large bowl. Stir to combine.
