First things first, this Blueberry Five Bean Salad is so easy to make that you can whip it up in a hotel room. How do I know that? Because I literally whipped it up in our hotel room last weekend.

I will say that it is only easy to make if you have access to a can opener, because this recipe calls for 5 cans of beans. I made the really smart decision to not bring a can opener from home… which resulted in me bringing my 5 cans of beans to the hotel kitchen staff for them to open. BLESS those kind people.

I wanted to have this Blueberry Five Bean Salad in our hotel room for snacking because I usually slack on my fiber and protein intake during vacation. Give me all the chips & salsa, margaritas, granola… but I still need some fresh, wholesome food that isn’t so rich and dense.

This salad is coming through with alllllll the fiber and plant-based protein thanks to five (!!!) different kinds of beans. Beans, beans, the magical fruit, am I right?

Then we add sweet corn, red onion, cilantro and blueberries (yes, blueberries!) to the bean mix. I know blueberries in a savory bean salad might seem weird, but those small bites of juicy sweetness are heavenly.

The fresh blueberries complement the blueberry dressing beautifully. The base of the dressing is simply olive oil, apple cider vinegar, mustard, salt and pepper. But it really comes together thanks to the addition of Bai® Brasilia Blueberry that I bought at Kroger for a berry twist! It’s the perfect dressing for drizzling on anything and everything this summer.

I love that their Simple Truth line carries many affordable, organic options—like their canned beans, which come in non-BPA cans. The produce is also affordable at Kroger, which is a huge plus for me since I’m basically a rabbit when it comes to fruit and veggies.

We ate this salad with endless tortilla chips, which made for the perfect beach snack, but this would also make a great lunch to prepare ahead of time and pack for the week! Serve it over greens, grains or on its own. Really amp up the flavor and pair it with a Bai Brasilla Blueberry drink on the side as well!

Ingredients

  • 1 15-ounce can red kidney beans
  • 1 15-ounce can chickpeas
  • 1 15-ounce can black beans
  • 1 15-ounce can black-eyed peas
  • 1 15-ounce can cut green beans
  • 1 cup corn, canned or thawed from frozen
  • 1 cup fresh blueberries
  • 1 medium red onion, finely chopped
  • 1 bunch fresh cilantro, finely chopped

For the dressing:

  • ½ cup olive oil
  • ½ cup Bai Brasilia Blueberry
  • ¼ cup apple cider vinegar
  • 1 teaspoon mustard
  • Salt and pepper, to taste

Instructions

  1. Drain and rinse all beans (first five ingredients); add to a large bowl. Add corn, blueberries, onion and cilantro; stir to combine.
  2. In a jar, add all ingredients for the dressing. Put the top on the jar and shake until ingredients are mixed together. Pour over the salad; stir to combine.
  3. Serve with lime wedges and chips for dipping!
